Waffle with strawberries

    For the waffle batter

    25 g fresh yeast

    500 g milk

    500 g water

    4 egg yolks

    600 g flour

    4 egg whites

    200 g melted butter, tepid

    pinch of salt

     

    For the whipped cream

    100 g heavy cream

    pinch of icing (confectioner’s) Sugar

     

    EXTRA

    piping bag with fine nozzle

     

    To decorate

    250 g strawberries

    cookies or chocolate in various shapes

     

Preparation

To make the waffles

Mix the yeast, milk and water together.

Beat the egg yolks by hand or in a food processor until frothy and fold into the mixture. Add the flour and whisk the batter until light and fluffy. Now beat the egg whites by hand or in a food processor until frothy and carefully fold into the batter.

Add butter and a pinch of salt. Cover the batter with a damp towel and leave to stand for 45 minutes at room temperature.

Spoon the batter with a soupspoon in a hot waffle iron. Bake the waffles until golden brown.

To make the whipped cream

Beat the cream with a pinch of icing Sugar until firm. Spoon the cream into a piping bag.

Garnishing

Pipe the whipped cream onto the waffle and decorate with strawberries and different shapes of cookies or chocolate, if desired.
